Easy-Healthy-Recipes 7: Roasted Turkey Breast with Swiss Chard and Quinoa

Ingredients
2 Boneless Skinless Turkey Breasts (split into 4 pieces) 2cups Frozen Stoplight Pepper (Red,Yellow,Green) Strips 1cup Quinoa 4 large Red Chard Leaves 1cup Mixed Spring Greens 2 Garlic Cloves (Pressed) 2tbsp Extra Virgin Olive Oil 2tbsp Apple Cider Vinegar 3tsp Cayenne Pepper 2tsp Sea Salt 3tsp Black Pepper 2tbsp Dried Parsley
Roasted Turkey and Peppers In a small bowl Mix the garlic cloves, 1 tbsp of olive oil, 1tsp cayenne pepper, 1tsp sea salt, and 1tsp black pepper until the mixture is thick and even.
Tenderize the turkey breasts with either a fork or a meat tenderizer. Now rub the mixture into the turkey making sure to rub vigorously.
Place the turkey breasts in a medium casserole dish. Now cover the turkey breasts evenly with the 2cups of stoplight peppers. Sprinkle the 2tbsp of dried parsley evenly over the peppers and turkey, then place the casserole dish in the oven.
Cook for 30 min at 350degrees. Make Sure that the internal temperature is 165 degrees. Serves 4
Serve with the quinoa and Swiss chard Salad and enjoy. The peppers drip down wonderful flavor into the turkey. This is a healthy, low fat, and gluten free recipe that will have your taste buds asking for more.
Swiss chard and quinoa salad
Prepare one cup of quinoa and set aside. Link on how to cook quinoa.***
Place a washed Swiss chard leaf on the cutting board and fold it in half lengthwise. Now roll the leaf up from left to right. Hold the leaf roll horizontally, slicing the leaf at about half-inch intervals. Use your fingers to separate the chard strips into a large salad bowl.
Add to the bowl the cup of mixed spring greens. Now add the remaining tablespoon of olive oil, the 3tbsp apple cider vinegar, 2tsp cayenne pepper, 1tsp sea salt, 1tsp black pepper to the bowl.
Toss the Swiss chard and greens until they are evenly coated with the dressing. Now add the cooked quinoa and toss the salad again until the quinoa is mixed in throughout.
This spicy salad is a great complement to the smoldering flavors of the roasted turkey. However it tastes great by itself and makes a great base for creating phenomenal hearty salads. Just add more veggies and some chicken or smoked salmon. You’ll have a great gluten free snack or satisfying healthy meal.
Place a turkey breast on a plate with a large portion of salad and enjoy. Serves 4.
